If you have found a vacation rental in France and were thinking of heading to the world-renowned wine-making region of Champagne (made up of five wine producing districts located within the historical province of Champagne, including Aube, Côte des Blancs, Côte de Sézanne, Montagne de Reims, and Vallée de la Marne) in order to sample some delicious sparkling wines, then you might be looking for a snack to enjoy along with your drink. Biscuits Roses de Reims are exceptionally pretty and very elegant biscuits that are also local specialities and are traditionally dunked into glasses of Champagne. Created around 1690 in the city of Reims (ergo the name “de Reims”), they are said to have first been made by a local baker who was trying to make the most of the heat in the oven between making two batches of bread. He came up with a special dough that was “bis-cuit”, i.e. cooked twice. Originally white, the biscuits went a rather unappealing grey colour when black vanilla bean pods were added for flavour. In order to correct this, the baker added a scarlet dye that turned the biscuits a much more attractive pink colour, which added the “Roses” part to their name. Finished with a sprinkling of caster sugar, the oblong biscuits are utterly charming and pretty and have counted the likes of King Charles X, Leopold II of Belgium, the Russian czar, and the Marquise de Polignac, as fans throughout the centuries.

Made of sugar, flour, egg, and salt, flavoured with vanilla, and twice-baked lending them a crispness that prevents them from falling apart when dipped into a liquid, these little culinary triumphs are the perfect thing to go with your French Champagne as well as with coffee, lemonade, and milk, should you not be inclined towards alcohol.
