When you should go: The lavender fields of Provence begin to bloom in mid-June. Much of the region is swathed in purple by the end of the month. Then, by mid-July, the blooms are normally at their height for the year. Harvesting soon follows and most will have been fully collected by the middle of August. So, to see the fields at their peak, it is best to plan your trip for around this time. Do keep in mind that there are some local variations in schedules and areas at higher altitudes usually bloom and are harvested later in the summer.
Where you should go: Lots of areas in Provence boast lavender fields but among the most famous of these is the Valensole Plateau, about an hour north of Aix-en-Provence. One of the most iconic spots associated with lavender in Provence is the 12th-century abbey of Notre-Dame de Senanque, which is a handsome stone gem set in a very picturesque manner amongst lavender fields.
