Visinada: A Recipe For A Perfect Greek Cherryade

Continuing our series of articles on travelling virtually with your taste-buds while regular travel is a ways off yet, we turn to another beverage recipe, this time a non-alcoholic delight from Greece. Especially as the weather gets warmer, the days get longer, and we remain in need of some nice treats to help get us through the day, there is nothing better than something nice and fancy to sip on as you unwind at the end of the day. Enter visinada (also spelled vissinada, visinata, and several other variations when romanised), a sour cherryade that is generally bought as a pre-made syrup to which cold water is added today but which is easy enough to make at home yourself. So, while we all look ahead to exploring Greece and her culinary tradition in person again someday soon, why not do it virtually for now and try and make this delicious recipe at home yourself (just don't blame us for any future fillings!)?
Ingredients:

1kg sour cherries
1kg granulated sugar
2-3tsp of lemon juice

Method:

1. Wash and then remove the stem and stone (if present) from the cherries. Squeeze them through a strainer and into a saucepan to get all of their juice. Rinse the skins and add them to the juice as well.

2. Add the sugar to the saucepan and bring to the boil, allowing to thicken, without letting it get too thick or letting the mixture turn into spoon sweets.

3. Add the lemon juice and then remove from the heat. Allow to cool and then store in glass bottles.

4. To serve, pour as much syrup as suits your taste and then top with cold water and/or ice.

5. Set aside some time to take a break and to sit outside or by a window and enjoy in peace for a few moments.
